越南式小鲍荔枝沙拉

荔枝的香甜味道和越南式浓烈的调味配料给与这道清凉的沙拉增添了刺激的快感。

用料:
1 罐財神牌鲍汁小鲍/财神牌清汤小鲍
50 克Hosen糖水荔枝,切片
35 克Hosen玉米粒
35 克芹菜,切细片
35 克红罗卜,切细块
30 克大白菜,切片
30 克豆苗
25 克小葱,切片
15 克芫荽叶,切碎
15 克薄菏叶,切碎
10 克罗勒叶(basir leaves),切碎

调味料:
3 汤匙鱼露
2 汤匙水
2 汤匙椰糖(gula melaka),捣碎
2 茶匙剁碎蒜蓉
1 粒红辣椒,切片
2 汤匙烤腰豆,剁碎
盐和白胡椒粉适量

作法:

  1. 将財神牌鲍汁小鲍/财神牌清汤小鲍,荔枝及蔬菜分别放在盛盘里。
  2. 混合所有的调味配料,并调和至可口味道。
  3. 将沙拉和调味品翻搅均匀 ,即可食用。

Vietnamese Fortune Limpets Salad With Lychee

(Serves 8 persons)

The distinctive flavour of the lychee imparts a refreshing sweetness while the zesty Vietnamese dressing adds a pungent kick to this refreshingly light salad.

Ingredients:
1 can Fortune Limpets in Abalone Sauce/ Fortune Limpets in Brine
50g Hosen Lychee in Heavy Syrup, thinly sliced
35g Hosen Whole Kernel Corn
35g celery, thinly sliced
35g carrot, thinly sliced
30g white cabbage, thinly sliced
30g dou miao
25g red onion, thinly sliced
15g coriander leaves, shredded
15g mint leaves, shredded
l0g basil leaves shredded

Dressing:
3 tbsp fish sauce
2 tbsp water
2 tbsp gula melaka, pounded
2 tsp garlic, minced
1 red chili, thinly sliced
2 tbsp roasted cashews, chopped
Salt and ground white pepper, to taste

Method:

  1. Arrange the Fortune Limpets in Abalone Sauce/Fortune Limpets in Brine, fruits and vegetables in separate piles on a serving platter.
  2. Combine all the ingredients for dressing and season to taste.
  3. Toss the salad with the dressing before eating.
