鲍贝玉鸳鸯

(五人份)

用料:
100克鲍贝
60可青芒果
60克小黄瓜
40克哈密瓜
50克酸晶头
1根红辣椒
30克红姜丝
50克油条
3汤匙炒香碎花生
1/2 汤匙炒香芝麻

调味料:
1汤匙油
1/2 茶匙盐
2汤匙酸梅羔
1茶匙桔子油
2汤匙香桃酱
2汤匙新鲜风梨酱

作法:

  1. 把鲍贝切成两片
  2. 把青芒果、酸晶头、红辣椒,哈密瓜、小黄瓜及油条切成丝。
  3. 油条丝炸脆备用
  4. 将碎花生和芝麻放盘中央,把蔬菜丝和水果丝排在周围,然后将鲍贝片铺在花生与芝麻上面。
  5. 把调味料拌均匀,淋在材料上即可上桌。

Shredded Abalone Clams with Assortment

(Serves 5 persons)

Ingredients:
100g Abalone Clams
60g green mango
60g Japanese Kyuri
40g rock melon
50g pickled leek
1 red chilli
30g red shredded gingers
50g Chinese fried cruller
3 tbsps toasted peanuts
1/2 tbsp toasted sesame seeds

Seasonings:
1 tbsp oil
1/2 tsp salt
2 tbsps plum sauce
1 tsp fresh lime oil
2 tbsps apricot jam
2 tbsps fresh pineapple puree

Method:

  1. Cut the Abalone Clams into two slices
  2. Shred the green mango, pickled leek, red chilli, rock melon, Japanese kyuri and Chinese fried cruller.
  3. Fry the Chinese cruller
  4. Place the toasted peanuts and toasted sesame seeds onto the center of a plate. Decorate the plate with shredded green mango, pickled leek, red chilli, rock melon, Japanese kyuri and fried cruller. Then place the Abalone Clams on top of the toasted sesame seeds.
  5. Mix the seasonings. Pour it onto the ingredients and serve.
