上汤澳州全鲍
用料:
一罐财神牌澳洲鲍鱼
一只老鸡 - 切四块
半公斤有肉排骨
60液体安士清水
作法:
- 老鸡与排骨以热水煮过。再以清水洗净。
- 取一锅,放入60液体安士水著滚,下老鸡和排骨 。以中火煮到剩下安士上汤。
- 将整罐未开鲍鱼置与热水中煮30分钟。稍冷后,开罐取出置碟中。
- 混合一汤匙玉米粉和二汤匙水。用以上汤中勾芡。以少许黑酱油调色。淋4汤匙于每只鲍鱼上,就成。
Whole Abalone with Superior Sauce
Ingredients:
1 can of Fortune Australia Abalone
1 old chicken - cut into 4 pieces
1/2 kg meaty pork sparerib
60 flOz water
Method:
- Blanch chicken and pork spareribs in hot water for 3 minutes. Discard water and rinse until all scum has been removed.
- Bring 60 flOz water to boil. Add chicken and pork spareribs, and simmer over low heat for 2 hours or until there is 20 flOz of stock left.
- Boil unopened can of abalone for 30 minutes in hot water. Cool before opening the can. Remove abalone and place on serving plate.
- Thicken chicken stock with a mixture of 1 tbsp cornflour, 2 tbsp water and a little dark soy sauce. Pour 4 tbsp sauce over abalone and serve.
