上汤澳州全鲍

用料:
一罐财神牌澳洲鲍鱼
一只老鸡 - 切四块
半公斤有肉排骨
60液体安士清水

作法:

  1. 老鸡与排骨以热水煮过。再以清水洗净。
  2. 取一锅,放入60液体安士水著滚,下老鸡和排骨 。以中火煮到剩下安士上汤。
  3. 将整罐未开鲍鱼置与热水中煮30分钟。稍冷后,开罐取出置碟中。
  4. 混合一汤匙玉米粉和二汤匙水。用以上汤中勾芡。以少许黑酱油调色。淋4汤匙于每只鲍鱼上,就成。

Whole Abalone with Superior Sauce

Ingredients:
1 can of Fortune Australia Abalone
1 old chicken - cut into 4 pieces
1/2 kg meaty pork sparerib
60 flOz water

Method:

  1. Blanch chicken and pork spareribs in hot water for 3 minutes. Discard water and rinse until all scum has been removed.
  2. Bring 60 flOz water to boil. Add chicken and pork spareribs, and simmer over low heat for 2 hours or until there is 20 flOz of stock left.
  3. Boil unopened can of abalone for 30 minutes in hot water. Cool before opening the can. Remove abalone and place on serving plate.
  4. Thicken chicken stock with a mixture of 1 tbsp cornflour, 2 tbsp water and a little dark soy sauce. Pour 4 tbsp sauce over abalone and serve.
