鲍鱼冬菇

(5人份)

用料:
100克鲍鱼
5朵香菇
5棵芥兰

调味料:
1汤匙蚝油
1汤匙油
少许白糖
少许盐
1茶匙玉米粉
3汤匙水
200克鸡高汤
适量鲍鱼汁

作法:

  1. 香菇用水泡软,挤干水份,去脚,用少许油 、蚝油和鸡高汤焖煮30分钟备用。
  2. 鲍鱼切片备用。
  3. 芥兰洗净,放入沸水中烫熟,捞起,排在盘子的两边。
  4. 用油、蚝油、鸡高汤、和鲍鱼汁煮香菇和鲍鱼,用玉米粉水勾芡,盛盘即成。

Braised Abalone with Black Mushroom

(Serves 5 persons)

Ingredients:
100g Abalone
5 black mushrooms
5 kai lan

Seasonings:
1 tbsp oyster sauce
1 tbsp cooking oil
pinch of sugar
pinch of salt
1 tsp cornstarch
3 tbsp plain water
200g chicken stock
abalone gravy to taste

Method:

  1. Soak the black mushrooms to soften it. Then dry them. Separate the stamp from the mushroom. Using some oil, oyster sauce and chicken stock, simmer the mushrooms for 30 minutes over low fire.
  2. Slice the Abalone.
  3. Wash the kai lan, boil it then drain them well and arrange them on plate.
  4. Using some cooking oil, oyster sauce and Abalone gravy from the can, cook the soaked black mushrooms and sliced Abalones. Mix some cornstarch with plain water. Pour it into the cooking pan then stir well and serve while hot.
