Wok-Fried Fortune Pacific Clams In Hoisin Sauce

(Serves 8 persons)

 

This tasty recipe is easy to make, yet special and celebratory, with the hoisin sauce and salted black beans providing a delicious twist.

Ingredients:
4 tsp sunflower oil
30g red onion, chopped
l0g green capsicum, diced
l0g yellow capsicum, diced
1 can Fortune Pacific Clams in Brine
35g garlic, minced
35g coriander leaves, chopped
20g sugar snap peas, blanched
3 tbsp hoisin sauce
2 tsp salted black beans (tau see)
2 tsp dark soy sauce
Salt and ground white pepper to taste
1 tbsp cornflour, blended with water

Method:

  • Drain the Fortune Pacific Clams in Brine, reserving half of the brine.
  • Heat wok until very hot. Add the oil, onion, capsicum and Fortune Pacific Clams in Brine. Stir-fry for 1 minute. Set aside.
  • Turn heat down to medium and fry garlic until fragrant. Add the rest of the ingredients (including the brine), except for the corn flour, and cook for another 1 minute.
  • Season to taste and thicken with corn flour.
 
 

財神牌鲍贝炒海鮮酱

(8人食用)

 

这道美味菜式做法虽简单, 却含有海鮮酱与黑豆鼓调配的美味,是一道别具一格的佳肴。

用料:
4 茶匙葵籽油
30 克小葱,剁碎
10 克青椒,切块
10 克黄教,切块
1 罐財神牌清汤鲍贝
35 克剁碎蒜蓉
35 克芫荽叶,切碎
20 克甜豌豆,泡熟
3 汤匙海鮮浆
2 茶匙黑豆鼓
2 茶匙黑浆油
盐和白胡椒粉适量
1 汤匙粟粉和水拌匀
 

调味料:

  1. 将財神牌鲍贝的清汤倒去一半,留一半做汤汁之用。
  2. 将锅烧至猛热,加入葵籽油,蔥蓉,青与黄椒及財神牌鲍贝,炒1分钟,然后端上放在一边。
  3. 转中火爆香蒜蓉。除了粟粉外,放入其余材料(包括鲍贝的清汤),煮多1分钟。
  4. 加适量调味,再加入粟粉煮至汤汁变稠。
